Apple Cake
As mentioned before, this cake is my favorite! My father’s recipe, it has been a mainstay in my family for as long as I can remember. When I used to bring it in to health food stores and local cafés I would always get excellent feedback. It is also one of my most requested baked goods amongst friends, which is quite surprising considering the cake’s simplicity.
I was asked to do catering for a Universal/Sam Roberts photoshoot. It was a day long shoot, so I did both breakfast and lunch, along with some snacks. Apparently the guys loved it, and towards the end fought over the extra muffins!
For breakfast I started them off with yogurt and granola parfaits, a fruit platter and of course my coveted vegan muffins. For lunch I made them three types of sandwiches (brie, pear & walnut + tomato, bocconcini and pesto + tuscan white bean & tuna salad), an antipasto platter with tons of grilled veggies and cheese, melon wedges wrapped in prosciutto. They then snacked the afternoon away on chips and salsa, and a tin of delicious homemade cookies.
